Summer Shanty Oyster Co. was founded on a simple idea: grow exceptional oysters while sharing our love for the waters of Little Egg Harbor Bay.

Established in 2024, our family-owned oyster farm is led by Patrick Henderson, with plenty of helping hands from his dad, Stephen Henderson, family, and friends who are always ready to jump in for a day on the water. From flipping cages and sorting oysters to celebrating every milestone, Summer Shanty has always been a labor of love built on dedication, patience, and a deep appreciation for the bay.

After two years of nurturing our oysters through calm summer days, freezing winters, and everything in between, we celebrated our first harvest over Memorial Day Weekend 2026.

Introducing our oysters: Bay Dreamers.

Named for the bay that raised them, Bay Dreamers are a true reflection of Little Egg Harbor Bay- clean, briny, and finished with a subtle sweetness that tells the story of the waters they call home.

At Summer Shanty Oyster Co., we believe every oyster carries a sense of place. Ours are more than just shellfish, they're the result of family, friendship, hard work, and a dream that began on the bay.
